  1. Preheat oven to 220 degrees C (gas mark 6) Lightly grease baking tray and set aside.
  2. Add the larger bag with the flour & salt to the mixing bowl, keep back approx 1 tablespoon for flouring your worksurface later, using your thumbs and forefingers rub the butter into the flour until it looks a little like breadcrumbs.
  3. Add the smaller bag, containing sugar and sultanas, and gently mix into the bowl.
  4. Add about half of the milk to the bowl and stir.
  5. Gradually mix in a little more of the milk, until you have a soft dough, don’t add too much too quickly or your dough will be wet and sticky!
  6. Turn out the dough onto a floured board and gently knead until smooth.
  7. Roll out your dough to approx 1cm thickness, use a scone/cookie cutter to cut out your scones, and place them on the greased tray.
  8. Brush the tops of the scones with a little milk.
  9. Bake in the top of the oven for 7-10 minutes, until the scones have risen and are golden.
  10. Enjoy!

A little tip, rubbing your butter into your flour, helps to prevent too much gluten build up, and will help your scones be a little crumbly and not too chewy!
